Yields: 24 cookies
Ingredients:
100g organic sugar (or coconut sugar)
70g organic butter (room temp.)
1 egg
1 tsp vanilla extract (or 1/4 tsp of vanilla powder)
100g room temp. peanut butter (I make mine fresh with organic unsalted peanuts in vitamix)
1 tsp baking soda
1 tsp salt (I prefer redmonds)
125g fresh milled organic soft wheat berries (you could also use fresh milled oat groats or white hard wheat if that’s all you have, I don’t sift any of these after grinding)
chocolate chips
Preheat oven to 350(F) degrees. Add sugar with butter and combine with mixer. Add egg, vanilla, and peanut butter, combine with mixer. Add baking soda, salt and fresh milled flour, mix with spoon. Add in chocolate chips to your liking, I tend to like lots of chocolate chips in our cookies! Spoon out onto tray and bake for 9-10 minutes.
